Zoervleisch | Sour beef stew

Super simple. Very tasty! A classic out of Limburg (a province in the Netherlands). Originally made with horse meat, but beef will work perfectly!
Ingredients
- 1 kg beef chuck or horse meat
- 200 ml vinegar
- 600 ml water
- 3 bae leaves
- 1 clove
- Butter
- 500 gr onions
- 4 tbsp apple syrup (appelstroop
- 5 pieces ontbijtkoek (old fashioned gingerbread)
- 2 tbsp sugar
- Salt
- Pepper
- 1.5 kg potatoes
- Olive oil
- 1 kg apples
- 75 ml water
- 2 tbsp sugar (add more if you like to)
- 1 lemon for the juice

Directions
- Slice your meat into big pieces
- Marinate the beef in a mixture of the water and vinegar and add the bae leaves and clove to it. Cover and let marinate for 24 hours (if possible!)
- Remove the meat from the marinate, but safe the marinate.
- Brown the meat in a pan with butter, remove the meat and brown the onions.
- Add back in the beef together with the apple syrup, gingerbread, salt and pepper. Stir and go in with the marinated, enough to cover all of the meat.
- Cover and let simmer, until the meat falls apart.
- If the sauce is not thick enough add a bit of cornstarch slurry to thicken.
- Wash and slice the potatoes into sticks
- Coat the potato sticks with olive oil, salt and pepper and bake in the oven at 200 degrees Celsius or 400 degrees Fahrenheit until golden and crispy
- Peel the apples and slice into small pieces.
- Add the apples to a pan together with the water, lemon juice and sugar. Bring to a boil and let simmer for 15 minutes
- When the apples are soft, blend them until a smooth consistency is reached!
- Serve the stew with the potatoes, apple sauce and mayonnaise
