Super simple. Very tasty! This is my go to easy, healthy and high protein recipe! Ready in no time and very tasty! Simply roast some veggies and add them to a blender with the delicious, sustainable pole and line caught and fair trade certified tuna from Sea Tales
Ingredients
- 2-3 shallots
- Few garlic cloves
- 4 bell peppers
- Few tomatoes
- Olive oil
- Salt
- Pepper
- Chili flakes
- Pasta rigatoni
- Parmigiano
- Parsley
- 3-4 cans of tuna
Directions
Crack the garlic and chop the shallot
Roast some tomatoes in the oven together with the garlic and shallot. Season with salt pepper and olive oil
Roast the bell pepper until blackened
Deseed and deskin the bell pepper
To a food processor add the bell pepper and tomatoes, mix well and add tuna. some pasta water, chili flakes, parmigiano, salt and pepper.
Add the sauce to a pan and mix with the pasta and some pasta water..
Serve with some parsley and parmigiano, enjoy!
