Thai green curry

Not so simple. Very tasty! The curry you normally make out of a packet, but now homemade a with lots and lots more flavor! When you made the curry one time from scratch you will not enjoy the packets anymore… that is the only thing you are risking here!
Ingredients
- 2 stalks lemongrass
- 2,5 cm galangal
- Green chillies
- 2 shallots
- Coriander
- 4 cloves garlic
- thai basil
- 1 tsp shrimp paste
- 4 chicken thighs
- Bamboo shoots
- 2 limes
- Red bell pepper
- 1 tsp coriander seeds
- ½ tbsp palm sugar
- 2 tbsp fish sauce
- 250 ml chicken stock
Directions
- Mince the lemon grass, galangal, green chilies, shallots and garlic
- To a mortar and pestle add the lemongrass, galangal, green chillies, shallot, garlic, coriander seeds, shrimp paste and a few basil leaves
- Fry the curry paste in some oil before adding the chicken.
- After some minutes add the coconut cream and let it thicken.
- Slice the bell pepper in strips
- Add the chicken stock followed by the bell pepper, Thai basil and bamboo shoots
- Season with lime juice and fish sauce
- Serve with rice and garnish with coriander
