Smoked salmon poke bowl

Super simple. Very tasty! This poke bowl is packed with protein and veggies, and therefor it is super healthy. But the best is, that it is not only super healthy, but also super tasty!
Ingredients
- 1 cup sushi rice
- 1 ⅙ cups water

⅙ cup sushi rice vinegar
- 1 tbsp sugar
- 1 tbsp salt
- 200 gr smoked salmon
- 2 can tuna
- 4 tbsp mayonnaise
- 4 tbsp sriracha
- 1 tsp sesame oil
- 1 tsp soy sauce
- 2 avocados
- 1 cucumber
- Few scallions
- sesame seeds
- 200 gr edamame
- 200 gr seaweed salad
- Some crispy onion
- 100 gr salmon eggs

Directions
Heat the vinegar, sugar and salt in the microwave until the sugar is dissolved.
- Rinse the sushi rice
- Cook the sushi rice in water. Once the rice is ready, transfer it to a wooden pot.
Pour the seasoning over the rice and mix it with a wooden spoon in a cutting motion.
- Set the rice aside
Mix the sriracha and mayonnaise
Mix the tuna with half the sriracha mayonnaise, the sesame oil and the soy sauce
Slice the avocado, cube the cucumber and cut the scallion.
Assemble the poke bowl, first add rice to a bowl, followed by all the ingredients and top it with the sriracha mayonnaise and sesame seeds
