Sardine teriyaki sandwich

Super simple. Very tasty! Want something different? This teriyaki sandwich is phenomenal. The sauce is perfect and compliments the sardines just like they were made for each other. To finish this sandwich it is served with a delicious, fresh carrot and cucumber salad!
Ingredients
- 1 Carrot
- 1 Cucumber
- 3 tbsp Rice vinegar
- 3 tbsp Soy sauce
- 1 tbsp Sugar
- 1 tsp Sesame oil
- 2 cans Sardines in olive oil
- Fried/crispy onions
- ½ Red pepper
- Coriander
- Baguette
- 60 ml mirin
- 60 ml soy sauce
- 60 ml sake
- 2 tbs sugar
- 1 garlic clove

Directions
Cucumber and carrot salad
Slice the cucumber and carrot in berg thin strings
- In a bowl add the rice vinegar, soy sauce, sugar and sesame oil. Mix and add you veggies, set aside till use
Teriyaki sauce
Finely mince the garlic
- In a steelpan add all the ingredients and bring to a simmer until the sugar is dissolved.
- When the sugar is dissolved and the sauce is a little thicker, set aside and let cool down.
Sandwich
In a pan add oil and fry the sardines until nice crispy and golden brown.
- Add teriyaki sauce to the pan with sardines, glaze them and set aside.
- In the same pan as the sardines crisp up the inside of the baguette (in the remaining teriyaki (sardine)sauce)
- Chop some coriander and thinly slice the red pepper
- In the bottom of the baguette add the sardines, the Japanese salad, the crispy onions, the red pepper, some teriyaki sauce, coriander, more teriyaki sauce and the top bun.
- Serve with the leftover salad and teriyaki sauce on the side!
