Quesadillas with smoked salmon

Super simple. Very tasty! Mexican style salmon quesadillas, not the standard quesadilla, but that certainly doesn't make it any less tasty! The smokey and rich salmon goes fantastic with the spicy and flavorful Mexican style veggies and the creamy cheese. A most try!
Ingredients

300 gr smoked salmon

4 Corn tortilla’s
- Lime juice
- Cheddar cheese/mozzarella

1 can tomato paste
- 1 tsp salt, oregano, onion powder
- 2 tsp cumin, paprika
- ¼ tsp black pepper, cayenne

2 big onion
-
4 garlic cloves
-
4 bell peppers
- Water
Directions
Mince the garlic and onion
- Chop the bell peppers
- In a pan with oil sauté the onion, garlic, tomato paste and bell pepper
- Add a little bit of water, lime juice and the spices and fry for a few more minutes
- In a dry skillet lay down the tortilla, generous cover with the cheeses, followed by a layer of the sauce, a layer of smoked salmon and another layer of cheese
- Bake the tortilla on both sides until golden brown
