Super simple. Very tasty! These Mexican style pulled chicken tacos have everything to give your family a big smile when eating! Delicious, rich and flavorful they are and on your table in just 30 minutes!
Ingredients
- 500 gr chicken breast
- 1-2 red bell pepper
- 1-2 green bell pepper
- 1-2 onion

2 garlic cloves
- 1 can diced tomatoes
- ½ tbsp black pepper
- 2 tbsp paprika powder
- 1 tbsp onion powder
- 1 tbsp garlic powder
- ½ tbsp chili powder
- 2 tbsp cumin powder
- 1 tbsp dried oregano

1 tbsp salt
- 8 small corn tortillas
- 150-300 ml beef stock (or 150 ml water with 1 beef cube)
- Olive oil

Lime juice
- Mozzarella cheese
Directions
- Mince the garlic and onion. Chop the bell peppers
To a bowl add the chicken and vegetables with all the seasonings, lime juice and some olive oil
- In a pan on medium heat with olive oil, bake the chicken, set aside. In the same pan add the vegetables and fry until a little soft (but not to soft), add water and let it simmer.
- Pull the chicken with two forks and add to the vegetables, give it a good stir
- Dip the tortilla in the juice of the vegetables and chicken and put it in a dry skillet.
- Assemble the tortilla by layering cheese, chicken and vegetable mix and some coriander, followed by some more cheese. Fry on both sides until golden brown and crispy.
