Peruvian style salmon with green sauce

Super simple. Very tasty! The most juicy salmon you will ever have, this recipe is just perfect for a quick, tasty and juicy salmon dish! The green sauce truly gives this dish a nice extra fresh kick!
Ingredients
- 600 gr salmon
- ⅔ bunch coriander
- ½ jalapeno
- 5 tbsp soy sauce
- ¾ lemon juice
- 3 garlic cloves
- 1 ½ tsp paprika
- 5 stems thyme
- 4 tbsp olive oil
- 1 ½ tsp cumin
- ⅔ bunch coriander
- ¾ bunch mint
- 3 garlic cloves
- ½ jalapeno
- 3 scallions
- ¾ lemon juice
- 8 tbsp yoghurt
Green sauce
Directions
- Chop the jalapeno
- In a blender add coriander, ½ jalapeno, soy sauce, lemon juice, 3 garlic cloves, paprika, thyme, olive oil, oregano and cumin. Blend until everything is combined and fine
- Cut the salmon in half almost all the way and fold the skin side to each other.
- Let the salmon marinate in the mixture
- Blend together the coriander, mint, 3 garlic cloves, scallion, lemon juice, yogurt, salt and pepper.
- Bake the salmon in oil on both sides until golden and crispy
- Serve with the sauce and enjoy!

Made this tonight and served with Spanish rice+broccili. It was delicious! I wrapped in foil and baked in the oven because I was afraid of sticking in the pan, but would love to try to get some char on it in the future.
A couple of adjustments: I only used 4 tbs yogurt in the sauce and it was plenty. Also I baked in foil at 400 for about 15-20 minutes instead of frying, then used excess sauce for my veggies.
