Super simple. very tasty! The perfect quick and easy pasta dish for a busy work week! In the time you cook your pasta the sauce is made and served with some delicious smoked salmon!
Ingredients
- 400 gr smoked sockeye salmon
- 300 gr tagliatelle
- 2 shallots
- 600 gr cherry tomatoes
- 3 garlic cloves
- Lemon juice + zest
- Splash of vodka
- 300 gr green asparagus
- 250 gr ricotta
- Salt
- Pepper
Directions
Mince the shallot and garlic cloves. Sautee in a pan with extra virgin olive oil
Go in with the halved cherry tomatoes and optional flambé with vodka.
Add lemon zest, juice, roughly chopped asparagus, salt and pepper and fry for a minute
Stir in the ricotta and mix the al dente pasta with some pasta water through the sauce. Finish with roughly chopped smoked salmon
