Noodles with miso mackerel

Super simple. Very tasty! The perfect combination, a miso sauce with mackerel, noodles and fresh lime juice! Give this dish a try and step up your noodle game!
Ingredients
- 2 tsp sesame oil

1 tsp Chinese 5-spice
- 4 cm thumb-sized piece ginger, finely grated
- 2 tbsp soy sauce
- 2 nest medium egg noodles
- 1 tbsp white miso
- 2 tbsp mirin

4 smoked mackerel fillets
- 2 tbsp vegetable oil, plus extra for greasing
- 2 small carrot, cut into thin batons
- 2 spring onion, thinly sliced
- 2 tsp sesame seeds
Directions
Whisk the sesame oil, Chinese 5-spice, ginger and soy sauce together until combined.
- Cook the noodles according to packet instructions, drain and rinse under a cold tap.
- Whisk together the miso and mirin, marinate the smoked mackerel in it.
- Meanwhile, heat the vegetable oil over a high heat in a large wok or frying pan and fry the carrot, scallion and noodles for 3-5 mins until piping hot. Stir through the soy and ginger sauce, tossing until the noodles are evenly coated.
- Serve the mackerel on top of the noodles, sprinkle with the spring onion and sesame seeds.
