Super simple. Very tasty! If you would ask me this is the best fried rice there is! a flavorful spicy, but sweet fried rice, with chicken, fried shrimp chips and goreng sugar snaps! Top it with a sunny side up egg and you will be satisfied like crazy! It takes some time if you make the sambals and everything yourself, but that is for sure not needed.
Ingredients
- 300 - 400 gr uncooked day old white rice
- 400 gr chicken thighs or breast
- 3 shallots
- 4 garlic cloves
- 20 gr turmeric
- 2 kaffir lime leaves
- 1 tbsp terassi
- 1 tbsp sambal oelek
- green onions
- 6 tbsp kecap manis
- 1 tsp laos
- optional 1 tsp MSG
- sugar snaps gr tomatoes
- 2 shallots
- 1 garlic clove
- 1 tsp sambal oelek
- ½ tsp terassi
- 1 tsp laos
- ¼ - ⅓ piece of creamed coconut
- 2 salam leaves
- 4 red chilies
- 2 tbsp sugar
- pinch of salt
- knob of turmeric
- 3 tbsp onion
- 2 garlic cloves
- 2 tbsp palm sugar
- 1 tsp laos
- ½ tsp trassi
- 1 tbsp sambal oelek
- 4 eggs
- 2 shallots

Directions
Mince half of the shallots, the garlic and turmeric. Separate the white and green part of the green onion and slice into rings. Set the green part aside in some ice water.
- Gather the rice, spices, sambal and kecap manis.
- Slice the chicken into small cubes or strips
- Go in with some neutral oil in a wok, followed by the chicken and fry until almost done. Set aside
- To the same pan add some more oil, the shallots, sambal oelek, the white part of the green onion, kaffir lime leaves, trassi and turmeric. Fry for some minutes before going in with the rice.
- Season with kecap. Stir well and make sure to declumb all the rice grains. When almost done, go back in with the chicken and add half the green part of the green onion. Give it a good last stir.
- Clean the sugar snaps, mince the shallots and garlic. To a pan add oil, shallos, garlic, terassi, sambal, crushed lemongrass, salam leaves and creamed coconut. fry until it forms a sort of paste. When formed go in with the sugar snaps and laos. Stir so that the sugar snaps are covered.
- Make the garnish for the nasi by frying an egg sunny side up and frying some shallot rings in some oil until golden and crispy.
- Serve the Nasi goreng with the sugar snaps, some lime wedges on the side and top with a fried egg, some fried shallot and spring onion.
