Super simple. Very tasty! A vegan recipe, made with mushrooms and a very delicious sauce! Perfect for the ones who love the taste of meat sandwiches!

Mushroom banh mì

Ingredients

  • 800 gr oyster mushrooms
  • Green onion 
  • 2 Tbsp sugar
  • 4 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp oyster sauce
  • 1 tsp white pepper
  • 2 tbsp sesame oil
  • 2 tsp sesame seeds

  • 6 tbsp mayonaise
  • Splash maggi sauce
  • Salt
  • Pepper

  • Rustic bread
  • Red onion
  • Cucumber
  • Carrot
  • Sugar
  • Salt
  • Rice wine vinegar
  • Cilantro

Directions

  1. Julienne the carrot and make half rings of the red onion
  2. Heat a pan with half vinegar, half water and sugar and salt to taste. Wait until the sugar has dissolved
  3. Put the onion and carrot in some jars together with some dried chilies, peppercorns and bae leaves. Let pickle until use
  4. Pull apart the mushrooms and add to a wok. Bake them until they release their liquid.
  5. Make a sauce by combining soy sauce, fish sauce, oyster sauce, sesame oil, white pepper, sugar and sesame seeds
  6. Cut the spring onion into big sticks and add the white part to the mushrooms together with the sauce you just made.
  7. When almost done, add the green part of the green onion and stir.
  8. Make a crispy chili mayo by combining  mayo, crispy chili oil, maggi sauce, salt and pepper
  9. Slice some cucumber into sticks for garnish
  10. Assemble your banh mì by spreading the mayo followed by the mushrooms, pickled veggies, cucumber and cilantro.
  11. Serve and enjoy!
