Super simple. Very tasty! A vegan recipe, made with mushrooms and a very delicious sauce! Perfect for the ones who love the taste of meat sandwiches!
Ingredients
- 800 gr oyster mushrooms
- Green onion
- 2 Tbsp sugar
- 4 tbsp soy sauce
- 2 tbsp fish sauce
- 2 tbsp oyster sauce
- 1 tsp white pepper
- 2 tbsp sesame oil
- 2 tsp sesame seeds
- 1 tbsp crispy chili oil
- 6 tbsp mayonaise
- Splash maggi sauce
- Salt
- Pepper
- Rustic bread
- Red onion
- Cucumber
- Carrot
- Sugar
- Salt
- Rice wine vinegar
- Cilantro

Directions
- Julienne the carrot and make half rings of the red onion
- Heat a pan with half vinegar, half water and sugar and salt to taste. Wait until the sugar has dissolved
- Put the onion and carrot in some jars together with some dried chilies, peppercorns and bae leaves. Let pickle until use
- Pull apart the mushrooms and add to a wok. Bake them until they release their liquid.
- Make a sauce by combining soy sauce, fish sauce, oyster sauce, sesame oil, white pepper, sugar and sesame seeds
- Cut the spring onion into big sticks and add the white part to the mushrooms together with the sauce you just made.
- When almost done, add the green part of the green onion and stir.
- Make a crispy chili mayo by combining mayo, crispy chili oil, maggi sauce, salt and pepper
- Slice some cucumber into sticks for garnish
- Assemble your banh mì by spreading the mayo followed by the mushrooms, pickled veggies, cucumber and cilantro.
- Serve and enjoy!
