Meatloaf with mash and stewed leek

Super simple. Very tasty! This dish is a mixture of many different cuisines. The funny thing is that it all comes together perfectly and makes a delicious dish!
Ingredients
- 600 gr ground beef
- 150 gr Panko
- 3 Eggs
- Few drips Tabasco
- 1 tbsp Italian seasoning
- 10 gr Parsley
- Salt
- Pepper
- 2 Garlic cloves
- 1 White onion
- 75 gr Parmigiano reggiano
- 2 tbsp Butter
- 1,5 kg potatoes
- Splash of Milk
- 6 tsp Dijon mustard
- Salt
- Pepper
- 3 tbsp Butter
- 3 tbsp butter
- 1250 ml Beef broth
- 1000 gr Leek

Directions
Peel the potatoes and cut into quarters
- Add the potatoes to a pan with salt and boiling water. Drain when they are fork tender
- Add a splash of milk, 1 tbsp Dijon mustard, salt, pepper and butter to the potatoes and mash
- Mince the onion and garlic
- In a bowl mix all the ingredients for the loaf except for the butter
- Shape the beef mixture into a bread form and top of with some butter bits on top
- Place the loaf into a baking dish and bake at 200 degrees Celsius until an internal of 65-70 degrees Celsius
- In the meantime cut the leek into half logs and fry in some butter. After a few minutes add the beef broth, cover and let simmer
- Serve and garnish with some parsley
