Masala chicken sandwich

Super simple. Very tasty! Once you have eaten this I can guarantee you will never make another sandwich again! Juice chicken in a spicy and flavorful masala sauce, this recipe is straight from the Caribbean and served with fresh, sweet and sour cucumber and red onion!
Ingredients
- 4 baguettes
- 400 gr chicken
- 1 onion
- 2 garlic cloves

3-4 maggi cubes
- pepper
- 2 big tbsp masala spices
- 1 tbsp tomato paste
- chili pepper
- 100 ml water
- ketjap manis
- kouseband / green beans
- 1 tomato
- cucumber
- red onion
- white wine vinegar
- sugar
- salt
Directions
Deskin the cucumber and slice in half rings together with the red onion.
- in a bowl add 5 tbsp white wine vinegar, 1 tbsp sugar, salt and pepper. stir and add the cucumber and red onion, let it marinate until use.
- mince the garlic and white onion, chop the chicken into cubes.
- in a pan with oil on medium heat, add the onion, garlic and maggi. fry for a minute and add the tomato paste.
- Add the chicken and masala spices and bake until the chicken has some color.
- Add 100 ml water, a generous amount of ketjap manis and the green beans. Let it all simmer with a lit for 15-20 minutes, add the last few minutes the green beans to the pan. Stir frequently
- serve on a baguette with some of the sweet and sour cucumber
