Super simple. Very tasty! A delicious Peruvian classic, a stir fry with beef, rice and fries! This one hits on another level and is served in no time!
Ingredients
- 500 gr beef tenderloin/sirloin/entrecote
- 1 red onion
- 2 tomatoes
- 4 garlic cloves
- 1 cm ginger
- 1 madame jeanette (better to use Amarillo pepper /paste)
- Vegetable oil
- Salt
- Pepper
- 2 tbsp soy sauce
- 1 tbsp apple cider vinegar
- White rice
- Fries
- Coriander

Directions
- Slice the beef into thin strips against the grain
- Deseed the tomatoes and slice into strips. Slice the onion into strips (not half rings)
- Mince the garlic, ginger and madame jeanette
- Peel some potatoes and slice into strips for the fries. Bake in the oven at 200 degrees Celcius or 400 degrees Fahrenheit for about 30 minutes or until golden brown.
- Boil the rice in salted water.
- Chop the coriander
- Get your wok piping hot with vegetable oil. Fry the beef in batches for about 1-2 minutes per batch. set aside.
- Add more oil to the hot wok and go in with the onions and tomatoes, fry for some minutes and add in the ginger, garlic and madame jeanette. stir and fry for a few seconds.
- Go in with the soy sauce, vinegar, salt and pepper. Mix and add in the beef.
- Serve with white rice, fries and garnish with coriander.
