Limburgse vlaai or sweet rice pie

Super simple. Very tasty! A Dutch classic, perfect for a Sunday afternoon! Make a dough, mix some rice with a few ingredients, bake and enjoy with some whipped cream and chocolate sprinkles!
Ingredients
- 250 gr flour
- 7 gr yeast
- ½ tsp salt
- 40 gr butter
- 30 gr sugar
- ½ egg
- 100 ml milk, luke warm
- 150 gr dessert rice
- 800 ml whole milk
- 125 gr sugar
- ½ vanilla bean
- 2 eggs
- Pinch of salt
Filling
Directions
- Mix all the ingredients for the dough in a bowl and knead until an elastic dough is formed, about 10-15 minutes.
- Place the dough into a bowl and cover. Let rise for 1 hour.
- Grease your pie tray in with some butter
- Knead the dough on a floured surface and roll our a bit bigger than the pie tray so that some of the dough will just fall over the edge. Cut off the excess dough.
- For the filling add the rice, milk, 100 gr of sugar, salt and vanilla bean marrow to a pan. Bring to a light boil and stir. Let simmer for about 15 minutes or until a thick consistency is formed. When thickened let the mixture cooldown.
- Split the egg yolks and whites.
- Beat the egg whites with 25 gr of sugar.
- carefully mix the egg yolks and beaten whites into the rice mixture.
- Add the filling to the pie.
- Bake the pie at 200 degrees Celcius or 400 degrees Fahrenheit for about 25-30 minutes.
- Let the pie cooldown
- Serve the pie with some powdered sugar on top.
