Super simple. Very tasty! This lemon curd cheesecake is perfect for the warm summer days! It is refreshing, easy to make and everyone loves it! Put some fresh fruit on top and your health concerns will also be solved! In this recipe I made the lemon curd myself, this is easy and so tasty. The lemon curd you don't use for this cake, can be eaten on bread, cakes and much more, IT IS delicious!

Ingredients
- 225 gr bastogne koek/graham crackers
- 75 gr butter
- 800 gr cream cheese
- 200 gr fine sugar
- Lemon zest
- 4 eggs
- 200 gr sour cream
- 40 gr cornstarch
- 125 gr butter
- 200 gr sugar
- 2 lemons zest and juice
- 1 lime zest and juice
- 2 whole eggs + 3 yolks

Directions
Make lemon curd by mixing all the lemon curd ingredients except for the eggs in a heatable bowl. Warm au bain-marie until the butter is melted.
- Take the bowl off the bain-marie and whisk in the eggs and yolk. Put the bowl back on the bain-marie and heat until 80 degrees Celsius while stirring constantly. Don’t make this mixture too warm otherwise the egg will solidify.
- Strain the lemon curd through a sieve and pour into a sterilized jar. Save in the fridge.
- Preheat the oven to 130 degrees Celsius and layer some baking paper into a 9 inch (23-24 cm) round pie tray. Grease the sides with butter
- Crumb the cookies and mix with the melted butter. Push tightly onto the bottom of the baking tray and bake for 10 minutes. Let cool down completely
- Mix the cream cheese with lemon zest and sugar. When combined, go in with the eggs, sour cream and cornstarch, mix until smooth.
- Put the cream mixture onto the pie crust and make smooth on top, bake in an oven for about 1 ¼ hours with a water tray on the bottom until the pie is a little jickely on top.
- Let stiff for 4 hours in the fridge
- Garnish with the lemon curd and some fresh fruit
