Super simple. Very tasty! Many people forget the beauty of red pesto’s. This sandwich will show you why you shouldn’t forget the beauty of it, because it is some damn tasty! Enjoy this delicious sandwich with the rich pesto, creamy burrata, fresh salad and the saltiness of the anchovies!
Ingredients
- 6 anchovy fillets
- Burrata
- 150 gr roasted red bell pepper
- 50 gr sun dried tomatoes
- 30 gr parmigiano reggiano
- 15 gr pine nuts + garnish
- 2 garlic cloves
- Splash of olive oil
- Some basil leaves
- Mesclun
- Balsamic glaze
- 100 gr roast beef
- 2 Baguettes
Directions
- Toast the pine nuts in a dry skillet
- In a blender cup blend the basil, roasted bell pepper, sun dried tomatoes, garlic clove, the parmigiano, salt, pepper and olive oil until smooth.
- Build the sandwich by spreading the pesto and layering the roast beef, burrata, some pine nuts, a drizzle of balsamic glaze and some mesclun
