Green curry wonton soup

Super simple. Very tasty! This is the perfect dish if you are unsure between a Thai curry or an Asian dish! The soup and dumplings get a whole new dimension thanks to the little bit of green curry paste!
Ingredients
- 2 cm ginger
- 4 cloves garlic
- Scallion 2 strings + garning
- Sesame oil (for frying)
- 1 tbs Green curry paste
- Wonton wrappers 200 gr
- Skipjack tuna 2 cans
- Cornstarch 1 tbs
- Chicken stock 2 liters
- 3 Shallots
- Soy sauce
- Boksoi
Directions
Mince the garlic and ginger. Finely chop the shallot and scallion
- In a frying pan with sesame oil, fry the curry paste, the scallion, ¾ of the ginger, ½ of the garlic and add after 1-2 minutes the drained tuna. Set aside and let cool down
- In a soup pan with sesame oil, fry the garlic, ginger, and shallot for 5 minutes on low heat. Deglaze the pan with soy sauce and add the chicken broth.
- In a bowl combine the tuna mixture, cornstarch, salt and pepper.
- Put a little bit of the mixture in the middle of a wrapper, paint the edges with water, fold diagonal, press, fold the 2 corners over each other, repeat with all wrappers.
- In the soup pan add the wrappers, boil until the dumplings float to the top and are bite ready
- Serve the wonton soup with some baksoi and scallions.
