Super simple. Very tasty. You don't know what to do with a big pieces of salmon? Preserve it and impress your friend with it! This recipe does both and it is so good!
Ingredients
- 1 kg Norwegian salmon
- 100 gr salt
- 200 gr sugar
- 2 tbsp black or red peppercorns
- 1 tbsp coriander seeds
- 1 tbsp fennel seeds
- Handful of dill
- Handful of parsley
- Handful of tarragon
- 1 orange zest and juice
- 2 lemon zest
- Splash of vodka
- Fennel
- Orange zest + juice
- Olive oil
- Lemon juice or vinegar
- Salt and pepper
Salad
Directions
Take a thick cut of fresh salmon and tap dry.
- Chop the parsley, dill and tarragon. Grind the peppercorns, coriander seeds and fennel seeds.
- Mix the herbs with the grinder seeds, fine salt, fine sugar, orange zest and juice, lemon zest and vodka.
- Layer some of the marinate in a tray, put the salmon on top and cover with the remaining marinate. Cover with plastic foil, add some weight on top and leave in the fridge to cure (around 12 hours, is ok)
- Make a fennel salad my slicing the fennel and mixing with the other ingredients
- Wash the cure of the salmon
- Season the salmon with some freshly grinded pepper, lemon zest and chopped dill.
- Slice the gravlax, serve with the salad and some toast and enjoy!
