Super simple. Very tasty! A Dutch classics, that is usually served alongside some coffee or tea! A rich flavorful dough filled with a nice almond paste!
Ingredients
- 155 gr butter
- 170 brown caster sugar
- 310 flour
- 30 ml milk (more if needed)
- 4 tbsp speculaas spices
- ¾ tsp salt
- 7 gr baking powder
- 1 egg
- Almonds
- 500 gr almonds (best peeled ones)
- 500 gr sugar
- zest ½ - 1 lemon + ½ lemon juice
- Pinch of salt
- 1-2 eggs

Directions
Mix together the flour, brown sugar, baking powder, speculaas spices and salt
- Now knead or mix it together with the butter and milk. Make a smooth ball and cover in plastic wrap. Let rest in the fridge for at least 1 hour
- Preheat the oven to 180˚C or 350 degrees Fahrenheit.
- Roll out the dough into a long rectangular sheet. Cut into 2 equal parts. Place one half in the baking tin and apply the filling. Cover with the second sheet of dough.
- Brush the dough with egg. Decorate with some almonds and brush again.
- Bake the filled speculaas for about 40-45 minutes. Remove from the oven and let cool down completely before removing from the baking tin.
Filling (almond paste)
Blanch the almonds in warm water for a minute or 2. Rub them in a tea towel to remove all the skins.
- Blend the peeled almonds with the sugar. When fine add the lemon zest, juice, egg(s) and some salt. Blend again until smooth
