Super simple. Very tasty! A traditional Dutch cookie, made with my grandmas recipe so you know it’s gonna be good!
Ingredients
- 140 gr butter
- 125 gr caster sugar
- 250 gr flour
-
½ egg
- Pinch salt
- Pinch cinnamon
- 1 tsp baking powder
-
300 gr almond paste (not a nut butter)
- 10 gr lemon juice
- A little lemon zest
- 20-30 gr water
Cookie dough
Filling
Directions
To a large mixing bowl add the flour, salt, cinnamon, sugar and baking powder. Mix well
Go in with the egg and knead until smooth. Let rest and cooldown in the fridge.
For the filling knead all the ingredients together.
Take a baking tray with or without parchment paper and grease it with butter or baking spray.
Roll the dough out to a thickness of 2½ mm (so that you can make 24 circular dough pieces.
Prick 24 circles out of the dough and layer 12 of them on the greased baking tray.
Put a little bit of filling on the dough circles laying on the baking tray
Layer the other 12 circles on top of the filling and pinch tight
Brush the cookies with egg
Pinch an almond on top and give another egg wash
Bake at 210 degrees Celsius or 410 degrees Fahrenheit for about 10-15 minutes or until light golden brown.
Serve and enjoy!
