Creamy ricotta pea pasta with crispy prosciutto

Super simple. Very tasty! A very tasty pasta dish with a creamy ricotta pea sauce and some crispy prosciutto form the bite and saltiness! Perfect for a night you when you haven’t got that much time, but you want to eat healthy and tasty food!
Ingredients
- 400 gr pasta
- 450 gr peas
- 3 tbsp olive oil
- 250 gr ricotta cheese
- Parmesan cheese
- Lemon juice and zest
- Salt
- Pepper
- 300 gr prosciutto
Directions
- Boil the peas until just soft
- Add the peas, ricotta cheese, salt, pepper, olive oil, Parmesan cheese, lemon juice and zest to a blender. Blend until smooth
- In a pan with some oil crisp up the prosciutto
- Boil the pasta
- To a pan add the sauce, a little pasta water and the pasta. Mix well
- Serve and garnish with prosciutto and some more Parmesan cheese
