Super simple. Very tasty! The most fluffy, gooey and delicious cinnamon buns you will ever have! Topped with a nice cream cheese frosting!
Ingredients
- 510 gr flour (12,5% protein, if lower add more accordingly)
- 60 gr white sugar
- 30 gr brown sugar
- 8 gr instant dried yeast
- Pinch salt
- 240 ml milk (35 degrees Celsius)
- 80 gr melted butter (cooled)
- 2 eggs (room temp)
- 120 ml heavy cream
- Splash of vanilla extract
- 80 gr soft butter
- 200 gr brown sugar
- 20 gr ground cinnamon
- 110 gr cream cheese (room temp)
- 60 gr butter (room temp)
- Pinch salt
- 190 gr icing sugar
- 60 ml milk

Directions
In a big bowl mix together the flour, with brown and white sugar, yeast, salt.
- Go in with the milk, melted butter, some vanilla extract and eggs.
- Knead until smooth and add flour accordingly
- Make a bowl and let rest for 1 hour
- Mix the cinnamon filling ingredients
- Roll out the dough to 25x38 cm
- Spread the cinnamon butter onto the dough
- Roll the long side and slice into 12 pieces.
- Layer them into a buttered baking tray and let rise for 45-60 minutes.
- Now cream together the cream cheese with the other icing ingredients until smooth and set aside to cool in the fridge
- Mix and heat the heavy cream with the vanilla extract in a pan, but don’t let it boil
- Pour the warm heavy cream over the buns and bake at 180 degrees Celsius or 350 degrees Fahrenheit for about 15-20 minutes
- Spread the icing and nuts onto them and serve
