Super simple. Very tasty! My recipe isn't authentic by any means, but it hits the right spot for sure! The chili isn't overly spicy or sweet, so it will be perfect for anyone! If your eating with some vegetarians, just leave a little pan without seperate!
Ingredients
- 700 gr ground beef
- 2 white onions
- 1 or 2 jalapeños + garnish
- 2 green bell peppers
- 2 poblano peppers
- 6 garlic cloves
- 4 tomatoes
- 3 tbsp tomato paste
- 3 tbsp chipotle adobo peppers with sauce
- 2 can diced tomatoes
- 1 can black beans
- 1 can kidney beans
- 400 ml beef stock
- Cilantro stems + leaves for garnish
- Sour cream
- Cheddar cheese
- Rice
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp cumin
- 1 tbsp smoked paprika
- 1 tbsp dried cilantro
- 1 tsp cinnamon
- ½ tsp cayenne pepper
- ½ tsp chili powder
- 1 tsp oregano

Directions
Mince the onion, jalapenos, cilantro stems and garlic.
- Make cubes of the green bell pepper, poblano peppers and tomatoes
- Sear the beef in a big pan with oil until brown, not gray.
- Take the beef out of the pan, add a little more oil (if needed) and saute the onion.
- Add the bell peppers, poblano peppers, garlic, jalapenos, cilantro stems, tomato paste, chipotle adobo peppers and all the spices to the pan. Stir well and fry down for a little.
- Now add the chopped tomatoes, canned tomatoes, stock and beef. Mix and let thicken for a few hours, adding more stock if needed.
- When you want to serve, add the beans to the pan together with some lime juice and warm them through.
- Serve with a side of white rice, some sour cream, cheddar cheese and cilantro leaves.
