Chicken parm roll ups

Super simple. Very tasty! Feeling fancy, but want something comforting to eat? Don’t look further, because this is the dish for you! Chicken parm, but with a restaurant twist!
Ingredients
- 4 chicken breasts
- 4-8 bacon slices
- 800 gr fine tomatoes out a can
- 2 tbsp tomato paste
- Salt
- Pepper
- 1 onion
- 4 garlic cloves
- Dried oregano
- Basil
- Mesclun/arugula
- Parmesan cheese
- Handful pine nuts
Directions
- Cut the chicken breast in half. slice the halved breast vertical in half but don’t slice all the way through (see video, underneath recipe)
- Fold the outer sides to the inside so that a circle arises. Wrap with bacon, a wire and put a small stick through the roll up.
- Bake the chicken roll ups in a pan with butter until golden brown on both sides. Season the chicken with salt and pepper while frying, when golden brown place the rolls on a baking tray
- Bake in the oven until an internal temperature of 75 degrees Celsius or 165 degrees Fahrenheit.
- Mince the onion and garlic
- Saute the onion and garlic in olive oil, add the tomatoes, tomato paste, basil, dried oregano, Parmesan rind, salt and pepper. Let simmer
- Roast some pine nuts in a dry skillet, until golden
- Serve by spreading sauce over a plate, followed by some mesclun/arugula, lot’s of parmesan cheese and roasted pine nuts.
