Super simple. Very tasty! A Philippino classic, but if you don't like garlic, it is not the one for you. Chicken braised in a rich sauce that is served with a garlic fried rice! A perfect meal if you would ask me! IB: Joshua Weissman
Ingredients

4 chicken drumsticks

4 chicken thighs

20 garlic cloves, heavily crushed

2 onions

Crack of black pepper

1 1/4 cup (300ml) unseasoned rice vinegar

1/2 cup (120ml) soy sauce (silver swan)

1/4 cup (60ml) dark soy sauce

1 tablespoon (7g) black peppercorns

3 tablespoons palm sugar (50g)

4 bay leaves

1/2 cup (120ml) water

Green onions for topping
- 3-4 cups cooked day old rice (about 2 cups uncooked)
- 12 garlic cloves
- 3 tbsp neutral oil
- Pinch of salt
- Dash ground black pepper
- Spring onion for topping
Sinangag (garlic fried rice)
Directions
- 1. Sear the chicken on both sides in a pan with oil until golden on all sides
- 2. Crush the garlic and slice some onion in half moons. 3. Add to the chicken together with soy sauce, dark soy sauce, palm sugar, black peppercorns, vinegar, sugar, bay leaves and water.
- 4. Cover the pan and bring to a boil. Now let simmer on low for 40 minutes. Flip the chicken and simmer for another 30 minutes.
- 5. Uncover and flip the chicken occasionally while the sauce thickens.
- 6. Serve with the garlic fried rice, some sauce and spring onion.
