Bo kho (Vietnamese beef stew)

Super simple. Very tasty! A Vietnamese staple and a fantastic and underrated beef stew! You can still see some of the France influences in this dish, because it is typically served with some fresh baguette!
Ingredients
- 1 kg beef ribs
- 2 tbsp soy sauce
- 2 tbsp hoisin sauce
- 2 tbsp brown sugar
- 2 tbsp fish sauce
- Pinch of salt
- ½ beef seasoning
- 2 tsp paprika powder
- 1 star anise
- 4 garlic cloves
- 1 dried chili pepper
- 2 cm ginger
- 1 clove
- 2 shallots
- 1 ½ stalks lemongrass
- ½ beef seasoning
- 1 onion
- 2 cm fresh ginger
- 1 ½ stalks lemongrass
- 3 dried chilies
- Cinnamon stick
- 2 tbsp tomato paste
- 2 tbsp soy sauce
- 3 star anises
- 4-5 bay leaves
- 1 liter chicken broth (or till all the ingredients are covered)
- 500 ml coconut water
- 5 carrots
- Coriander/cilantro
- Bread rolls/baguette
- Lime
- Salt and pepper to taste

- Crack the garlic and peel. Peel and mince the shallot, Mince the 2 lemongrass stalks
- To a mortar and pestle add all the ingredients for the Vietnamese beef seasoning.
- Wash your beef and slice into cubes.
- In a bowl marinated the beef with ½ of the beef seasoning, soy sauce, hoisin sauce, brown sugar, fish sauce and salt.
- slice the onion into half rings, slice some ginger pieces and cut the carrots into bite size pieces.
- Sear the beef in a big pan with oil. When browned, take out the beef and go in with the rest of the minced lemongrass, ginger, onion, cinnamon stick, bay leaves, star anise and dried chillies.
- When the smell is fantastic, add the tomato paste and soy sauce. Give it a good stir
- Go back in with the beef and add the stock and coconut water. Close with a lit and let simmer for 3 hours.
- Go in with the carrots and let simmer for another 30 minutes or until the beef is super tender.
- Serve with coriander, lime and bread
