Not so simple, but very very tasty! Birria beef is super good, but when you take pasta and mix that with the birria. You get something that is out of this world; rich, flavorful and just perfect! Try making this recipe and you never want something else ever again!
Ingredients
- 1.5 kg Chuck roast
- 3 bay leaves
- 1 tsp oregano
- ½ tsp cinnamon
- 1 ½ tsp onion powder
- 1 ½ garlic powder
- 1 ½ tsp salt
- 1 tbsp peppercorns
- 2 rosemary sprigs
- 2 thyme sprigs
- 4 cubes beef stock
- 3 cups water
- 2 tbsp tomato paste
- 1 tomato
- 5 garlic cloves
- 1 onion
- 1 tsp onion powder
- 1 garlic powder
- ½ tsp oregano
- pinch salt
- pepper
- 6 Guajillo peppers
- 3 ancho peppers
- 5 arbol peppers
- 350 ml water
- Chives
- Parmesan cheese
- 300 gr pasta
- Cornstarch slurry
- Onion
- Beef broth

Directions
- Deseed the peppers and chop the garlic, onion and tomato
- In a pan with some oil, sear the beef, set aside and saute the onion, garlic and tomato. Add the tomato paste, spices, the peppers and water. Simmer for 30 minutes
- Blend the sauce
- Toast the peppercorns in a dry skillet
- To a pan add the meat and all meat ingredients and strain the sauce into it, let cook for 3-4 hours
- Break down the meat
- Mince an onion and chop the coriander
- Boil the pasta in beef broth
- Add the Birria beef and sauce to a pan, add Parmesan cheese and a cornstarch slurry to thicken
- Add the pasta to the pan with Birria and mix
- Serve the pasta with chives, Parmesan cheese and onion
