Bibimbap with salmon

Super simple. Very tasty! Want to impress your friend, but also want to make a healthy and nutritious dinner? Then this is the perfect dish for you, it is a twist on the famous Korean bibimbap. We use canned salmon instead of beef and therefore it is easier to prepare while holding all the nutritional benefits!
Ingredients
- 4 cans salmon
- Beansprouts
- 2 Carrots
- few Persian cucumber
- handful Spinach
- 300 gr Mushrooms
- 300 gr Radish
- Rice vinegar
- Sesame oil
- Sesame seeds
- 300 gr Rice
- Scallion
- Lemon
- 2 tbsp gochujang
- 1 tbsp sesame oil
- 1 tbsp sugar
- 1 tbsp water
- 1 tbsp toasted sesame seeds
- 1 tsp vinegar
- 1 garlic clove

Directions
Marinate the salmon in some soy sauce, sesame oil, brown sugar, garlic and lemon juice
- Cook rice
- Julienne the carrot, radish and thinly slice the cucumber
- Make the spinach with some garlic and sesame oil
- Wok the carrots with some salt
- Wok the mushrooms with some salt
- Pickle the radish (sugar, vinegar, salt, water) and cucumber (sugar, vinegar, salt, water, sesame seeds and sesame oil)
- Cook the beansprouts
- Heat the salmon
- Serve the rice in the middle with all the toppings, garnish with the sauce and green onions
