Beef birria tacos

Not so simple. Very tasty! One of my new favorite foods to eat and I know for sure it will be the same after you have tried it!
Ingredients
- 1.5 kg Chuck roast
- 3 bay leaves
- 1 tsp oregano
- ½ tsp cinnamon
- 1 ½ tsp onion powder
- 1 ½ garlic powder
- 1 ½ tsp salt
- 1 tbsp peppercorns
- 2 rosemary sprigs
- 2 thyme sprigs
- 4 cubes beef stock
- 4 cups water
- 2 tbsp tomato paste
- 1 tomato
- 5 garlic cloves
- 1 onion
- 1 tsp onion powder
- 1 garlic powder
- ½ tsp oregano
- pinch salt
- pepper
- 6 Guajillo peppers
- 3 ancho peppers
- arbol peppers
- 350 ml water
- Corn tortillas
- Cilantro
- 1 red onion
- Jalapeño
- Cheese
- Lime

Directions
- Deseed the peppers and chop the garlic, onion and tomato
- In a pan with some oil, sear the beef, set aside and saute the onion, garlic and tomato. Add the tomato paste, spices, the peppers and water. Simmer for 30 minutes
- Blend the sauce
- To a pan add the meat and all meat ingredients and strain the sauce into it, let cook for 3-4 hours
- Break down the meat
- Chop some red onion, jalapeño and cilantro
- Build the corn tortillas by dipping them in the sauce, adding some cheese, beef, red onion, jalapeños, cilantro and giving it a sear in a dry skillet
- Serve with some of the birria sauce, red onion, cilantro and lime
