Bbq chicken quesadillas

Super simple. Very tasty! This is the meal I make when I want something healthy, high in protein and quick! Everybody loves it and it taste the best on a Tuesday, just call them tacos instead of quesadillas!
Ingredients
- 800 gr chicken breast
- 2 tbsp paprika
- 2 tbsp onion powder
- 2 tbsp garlic powder
- 1 tbsp salt
- 1 tbsp pepper
- Red onion

- Cilantro

Shredded Mexican cheese or choice
- Shredded mozzarella
- Corn tortillas
- 180 gr brown sugar
- 180 gr ketchup
- 60 ml apple cider vinegar
- 60 ml water
- 1 tbsp worcestershire

1 ¼ tbsp mustard
- 1 tbsp paprika
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp salt
- 1 tbsp pepper
- A splash of hot sauce
- 6 tomatoes
- 2 limes
- 2 small white onion
- 4 corns on the tub or 300 gr canned corn
BBQ sauce
Corn salsa
Directions
Deseed the tomatoes and chop together with the white onion.
Grill the corn on a skillet until it has some color and rub it if the tub
Mix the veggies in a bowl, squeeze out the lemon juice onto it and season with salt
Season the chicken with paprika, onion, garlic, salt and pepper.
To a pan add some butter or neutral oil and bake the chicken until golden on both sides and cooked through.
Pull the chicken a part and set aside
Make the BBQ sauce by combining all the ingredients in a pan and bring it to a light simmer for about 10-15 minutes. Put half of it by the shredded chicken and set the other half aside to cool down.
Make half rings of the red onion and chop the jalapeño and cilantro
Assemble the tortilla in a pan on medium heat. First some mozzarella then the chicken, red onion, jalapeño and the Mexican cheese of your liking. Bake on both sides until golden
Serve with the corn salsa, bbq sauce and chopped cilantro. Enjoy!

Hoi, grote fan hier. De kip bij pulled chicken was opzich goed alleen ik zou er volgende keer nog watextra bite aan willen toevoegen. Hij was een beetje flauwig. Hoe doe ik dit?
