Super simple. Very tasty! This could be done in 20 minutes or made in 2 hours. The difference is the homemade pitas, but store bought work as good! A pita stuffed with a delicious lamb/beef filling served with a nice tahini sauce!
Ingredients
- 500 gr / 1 lb lamb mince
- 1 onion
- 60 gr / ½ cup parsley (chopped)
- 4 garlic cloves
- 1 tbsp smoked paprika
- ½ tbsp salt
- ½ tbsp black pepper
- ¾ tbsp all spice
- 1 tsp cumin
- 1 tsp coriander
- ½ tsp cinnamon
- 1 tbsp olive oil
- 125 gr / ½ cup yogurt
- 30 gr / ¼ cup parsley
- ½ lemon
- 30-60 gr / ⅛ -¼ cup tahin
- 1 tsp black pepper
- 1 tsp salt
- 1 tbsp olive oil
- 500 gr flour
- 300 gr water
- 7 gr yeast
- 5 gr / 1 tsp salt
- 3 gr / ½ tsp sugar

Directions
Mince the onion, garlic and roughly chop the parsley.
- Mix all the ingredients together in a bowl and mix by hand
- Slice the pitas in half and stuff them with the mixture.
- Grill on all sides until cooked through
- Serve with the sauce and enjoy!

Pita's
Mix luke-warm water with the yeast and let sit until bubbles form.
- Mix the flour with olive oil, salt and sugar. Pour over the yeast mixture and knead until smooth.
- Cover and let rest for 1 hour or until doubled in size.
- Slice the dough into 8-12 equal pieces and make balls.
- Let rise for another 15-30 minutes. before rolling out.
- Bake in the oven or BBQ at 200-240 degrees Celsius, on a piping hot pizza stone or baking tray. Flip a few times, to make them puff better. (this can also be done in a very hot pan.
